Ingredients for 2 portions
- Prepare the rice noodles. Remove the ends from the beans and fry them in a little peanut oil in a wok. Crumble the tofu.
- Heat the peanut oil in the wok and fry the tofu until hot. When the tofu is crispy, stir in the paste and beans.
- In a separate pan, fry two eggs in oil to make one fried egg each.
- Serve the Pad Kra Pao with rice noodles and fried egg together. Top with red chilli rings and Thai basil or coriander if desired. Enjoy your rice appetite!
