Instructions
Put the cooked rice into the Hangiri.
Mix rice vinegar with salt and sugar and strain through the rice. This is easiest if you make grooves in the rice using a fork and pour the rice wine vinegar blend over the middle of the rice.
Then use the fork to mix everything together thoroughly and set aside to allow it to cool for another 20-30 minutes.
Traditional use
Hangiri bowls are traditional Japanese wooden bowls used for preparing sushi rice. For this, the cooked sushi rice is mixed with rice vinegar and spices in the hangiri. The wooden bowl absorbs the excess liquid. This gives the rice its perfect consistency, characteristic shine & seasoning.
