Vegan Nigiri Sushi

Ingredients

  • 300 g sushi rice
  • A handful sesame seeds

  • Sushi ginger to taste
  • Soy sauce to taste
  • One packet of onigiri nori sheets
  • 1 avocado
  • 1 bell pepper
  • 1 cucumber
  • 1 carrot
  • 1 courgette
  • or vegetables of your choice
  • Salt
  • 500 ml water
  • Wasabi (vegan)

Preparation  

  1. Prepare the sushi rice
  2. Stir 2 tbsp. rice vinegar into the rice and leave to cool.
  3. Then form the rice into small balls and strips. Top these with vegetables (avocado, pepper, cucumber, carrots, courgettes) and wrap a nori sheet around each one. Sprinkle with black sesame seeds.
  4. Serve the sushi with pickled ginger, a little wasabi and soy sauce. Enjoy your sushi with these vegan nigiris!
