Nasi Goreng – Indonesian Stir-Fry

Preparation
- Cook the basmati rice in a pot or a rice cooker.
- Remove the seeds from the chilli and chop finely. Cut the carrot and shallot into cubes. Cut spring onions into rings, pak choi and peppers into bite-sized pieces. Chop the tomato and cucumber.
- Heat the coconut oil in the wok. Fry the nasi goreng paste, chillies, and shallots in it. Add the vegetables and fry for another 2 - 3 minutes.
- Season with sambal oelek, ketjap manis and soy sauce. Add the rice and fry. Serve and prepare fried eggs in the same wok.
