Nasi Goreng – Indonesian Stir-Fry

Ingredients for 4 portions

  • 400 g basmati rice
  • 50 g nasi goreng paste
  • 4 tbsp. ketjap manis
  • 1 tbsp. sambal oelek
  • 1 tsp. soy sauce
  • 1 tbsp. coconut oil
  • 4 eggs
  • 4 baby pak choi
  • 2 spring onion
  • 2 shallot
  • 2 fresh tomato
  • 1 chili
  • 1 carrot
  • 1 red pepper
  • 1 yellow pepper
  • 1 cucumber
  • Fresh cilantro

Preparation

  1. Cook the basmati rice in a pot or a rice cooker.
  2. Remove the seeds from the chilli and chop finely. Cut the carrot and shallot into cubes. Cut spring onions into rings, pak choi and peppers into bite-sized pieces. Chop the tomato and cucumber.
  3. Heat the coconut oil in the wok. Fry the nasi goreng paste, chillies, and shallots in it. Add the vegetables and fry for another 2 - 3 minutes.
  4. Season with sambal oelek, ketjap manis and soy sauce. Add the rice and fry. Serve and prepare fried eggs in the same wok.
